BLACKENED SALMON WITH A NECTARINE SALSA

Today I am making Blackened Salmon with a Nectarine Salsa. It has minimal ingredients, is super simple to make, and perfect for summer. Find the recipe below:



 

INGREDIENTS:

– 2 nectarines, diced

– ½ cup of red onion, diced

– ¼ cup of fresh cilantro, chopped

– ½ lime, freshly squeezed

– Kosher salt and freshly ground pepper

– 2 tbsp extra virgin olive oil

– 2 lbs salmon, skin on

– 2 tbsp The Fresh Market Blackened Spice Rub

DIRECTIONS:

1. In a medium bowl, combine nectarines, onion, cilantro and lime juice. Season with salt and pepper, to taste.

2. Heat oil in a large skillet over medium high heat. 

3. Season salmon with blackening spice rub. 

4. Place salmon in skillet, skin side-up, for 3-5 minutes per side, or until desired level of doneness. 

5. Serve salmon topped with salsa.
