Since you guys love all my recipe round-ups on here, I thought I would start sharing a few of my own. Today I have a simple and delicious breakfast crustless quiche recipe that’s perfect for weekly meal planning, breakfast potlucks, and feeding big crowds. It’s easy to prep ahead of time and you can really add any vegetables you like.
Personally, I love a combination of fresh spinach, onion, and of course cheese. Peppers, mushrooms, and even tomatoes would work well too! Also, I took these photos with my iPhone. What do you think?! I feel like they turned out pretty nice 😉 .
Easy Crustless Cheese & Spinach Quiche
- 7 eggs
- 2 cups of shredded cheddar cheese
- 1 pint of low fat cottage cheese
- 3/4 cup of flour
- 1 cup of milk
- 2 tablespoons of butter, melted
- 1 cup of fresh spinach, chopped
- 1/2 onion, chopped
- Preheat oven to 350 degrees.
- Sauté onions in a pan and set aside.
- Beat 7 eggs together in a large bowl with a whisk.
- Add the cottage cheese, flour, milk, melted butter, chopped spinach, and onions to the bowl. Mix everything together.
- Add most of the 2 cups of shredded cheese to the bowl and mix together. Save a little to sprinkle on top.
- Pour into a greased 9X13 inch baking pan.
- Bake in the oven for 40 minutes.
- Let cool for at least 10 minutes before serving.
