Smoked Salmon Cucumber Bites



  1. Cut the cucumber into 3/4 of an inch thick slices.
  2. Scoop a 1/2 inch deep depression from one side of each round with a spoon or melon-baller to form little cups.
  3. Spoon a 1/2 teaspoon of cream cheese into each cup.
  4. Top each cup with 1 salmon strip and a few sprinkles of chives to garnish.
