Smoked Salmon Cucumber Bites
Ingredients
- 1 large cucumber
- 4 ounces of cream cheese {softened}
- 4 ounces of smoked salmon cut into 2 inch strips
- 2 tablespoons of fresh chopped chives
Instructions
- Cut the cucumber into 3/4 of an inch thick slices.
- Scoop a 1/2 inch deep depression from one side of each round with a spoon or melon-baller to form little cups.
- Spoon a 1/2 teaspoon of cream cheese into each cup.
- Top each cup with 1 salmon strip and a few sprinkles of chives to garnish.
