EASY LOBSTER PASTA RECIPE

Today I am teaming up with The Fresh Market to share a super easy and delicious lobster pasta! It is super easy to make and you can even substitute the lobster for shrimp or scallops. You can see the Instagram Reel of the recipe HERE.

INGREDIENTS:

– 4 tablespoons of butter
– 1 lobster tail
– 1 tablespoon of olive oil or avocado oil
– 1 shallot, finely chopped
– 2 garlic cloves, finely chopped
– 1/4 cup of white wine
– 1 box of cherry tomatoes
– angel hair pasta
– half of lemon
– parsley, finely chopped for garnish
– salt & pepper to taste

DIRECTIONS:

1. Bring a large pot of salted water to a boil. 
2. Remove the lobster meat from the shell. Using shearing scissors, turn the tail over and cut down
each side. Peel the shell away and remove the meat. Chop into large pieces.



3. In a saucepan on a medium heat, combine the olive oil/avocado oil and 2 tablespoons of butter. Once the butter has melted and is slightly foaming, turn the heat to low and add the lobster meat to the saucepan. Cook for 3 – 4 minutes or until the flesh is white and pink. Remove the lobster from the pan with a slotted spoon and set to the side. 
4. Add the shallots and garlic to the saucepan and cook for 2 minutes while stirring occasionally. Deglaze the pan with the white wine and scrape off all of the brown parts from the pan. Cook until 80% of the wine has been absorbed. 
5. Turn the heat to low and add the cherry tomatoes to the pan. Cook for 10 – 15 minutes or until they have burst open. You can press on them with the back of a wooden spoon.



6. Add the pasta to the pot of water. Cook pasta according to the package and make sure to reserve 1 cup of pasta water.
7. Add the cooked pasta and the rest of the butter to the saucepan with the tomatoes and mix together. Slowly incorporate the reserved pasta water and butter until you have a silky and glossy texture for your sauce. Add the lobster, a sprinkling of fresh parsley and lemon juice and stir through. Serve immediately and enjoy!
