I’ve always been a huge fan of celebrating Cinco de Mayo. Mexican food is a favorite of mine and I love an excuse to entertain friends and family. May is right around the corner so today I’m going to show you how easy it is to put together a fun and effortless Cinco de Mayo party. Let’s be honest guys, who doesn’t love tacos?
So first things first. Let’s start with the food. I always find buffet style serving to be extremely inviting, casual, and fun. You can create a taco bar and set up everything in advance. For mine, I included two types of tortillas {corn and flour}, shredded cheese, black beans, red onion, tomatoes, lettuce, two types of salsa, and sour cream. Think about what you like on your taco and provide lots of fun options for your guests.
For the protein I made a SUPER easy slow cooker Mexican shredded chicken. I’ve provided the recipe below, but it’s basically just chicken breasts, a jar of your favorite salsa, and a packet of taco seasoning. I mean, can it get any easier? They taste fantastic and make great leftovers. I used mine for tacos, but you can also use the chicken for burritos, quesadillas, enchiladas, and even nachos.
To go with the tacos, I also made some cilantro rice and homemade guacamole. You can find both recipes and pictures of my Mexican fiesta below.
Now that we have the food, let’s discuss the drinks. What goes great with tacos? Beer of course and two of my favorite brands are Corona and Modelo. I’m a huge fan of Corona Light because it is full of flavor, and only 99 calories. It has a smooth taste and pairs great with spicy and citrus-infused dishes. I’m also a fan of Modelo Negra. It is brewed longer to enhance the flavors.

Slow Cooker Shredded Mexican Chicken
- 4-6 boneless, skinless chicken breasts
- 1 jar of your favorite salsa
- 1 package of taco seasoning {I only use half of the package because I don't like mine too spicy}
- Place the chicken breasts in the slow cooker.
- Add the taco seasoning and jar of salsa.
- Mix everything up so that the chicken is covered completely.
- Cook on high for 5-6 hours.
- Once done, remove chicken and use a fork to shred into tiny pieces.
Cilantro Lime Rice
- 1 cup of long-grain white rice
- 2 tablespoons of lime juice
- 1 tablespoon of butter
- 1/2 cup of chopped cilantro
- Bring 2 cups of water to a boil.
- Once boiling, add the rice and butter and stir.
- Cover with a lid, reduce the heat to low, and simmer until tender {check the package to see how long you should cook it}.
- Once done, add the lime juice and chopped cilantro to garnish.
Homemade Guacamole
- 2 avocados
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 ripe tomato, chopped
- 1 lime
- salt + pepper
- Peel and mash avocados in a medium serving bowl.
- Stir in chopped onion, garlic, tomato, lime juice, salt and pepper.
- Chill for at least a half hour before serving.
