Now that the weather is getting colder, I am less inclined to want to go out. I love cooking and find that it is sometimes fun to switch things up. Recently for date night, we decided to stay in and I made something special at home. My husband isn’t too picky of an eater and I always love testing out new recipes on him so I went with a bit of a different menu this time.
I wanted to create something special and more elevated than our average week night meal so I decided to make salmon wellington with some roasted brussels sprouts on the side. Lastly, for dessert we had some homemade pumpkin cupcakes {I’ll be sharing the recipe to that next week}.
So let’s start with the star of the meal: the salmon wellington. I’ve made beef wellington before, but wanted to try switch it up. I used Bumble Bee SuperFresh® products which helped me out a lot. Their freshly frozen salmon made it convenient and easy for me to test out my new recipe.
Bumble Bee SuperFresh® smells and tastes amazing. No need to worry about any fishy smells here. Because you are able to prepare the Bumble Bee SuperFresh® straight from the freezer, there isn’t any smell associated with thawing fish. Their frozen protein has stayed that way from harvest to your oven unlike most of the “fresh” fish you find at the seafood counter. That means it is fresh tasting, and fresh smelling.
It is super easy to prepare too. Just slip the Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil into its own parchment paper {included} and let your oven do the rest. The directions are on the back of the packaging and easy to follow. Because I was making salmon wellington and wrapping mine in puff pastry, I didn’t use the parchment paper included and instead used the same baking time as the directions {about 25 minutes at 425°F}.
To decorate the table I decided to add a few fresh flowers that were leftover from a baby shower my friends threw over the past weekend…more on that soon! I also took out our fancier dinnerware that we got for our wedding to make it more special. We both felt like the dinner turned out great and this will for sure be a recipe that I will make again in the near future. See some pictures of the finished product as well as the recipes below…
Salmon Wellington
- 4 tablespoons of butter
- 4 cloves of garlic, chopped
- 1 onion, chopped
- 8 ounces of fresh spinach
- 1/2 of a cup of breadcrumbs
- 6 oz. of cream cheese
- 1/2 of a cup of parmesan cheese
- 2 sheets of puff pastry at room temperature
- 1 package of Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil
- 1 egg, beaten
- salt & pepper
- Preheat oven to 425°F.
- In a pan over medium heat melt the butter. Then add the garlic and onions. Cooking until translucent.
- Add the spinach, salt and pepper, cooking until spinach is wilted.
- Next, add the breadcrumbs, cream cheese and parmesan, stirring until mixture is evenly combined. Remove from heat and set aside.
- On a cutting board, smooth out the sheet of puff pastry. Place the salmon in the middle of the pastry and season both sides with salt and pepper.
- Place several spoonfuls of the spinach mixture on top of the salmon, smoothing it out so that it does not spill over the sides.
- Fold the edges of the puff pastry over the salmon and spinach, starting with the longer sides and then the shorter ends. Trim any excess pastry from the ends, then fold the ends on top.
- Flip the puff pastry-wrapped salmon over and transfer to a baking sheet lined with parchment paper.
- Brush the beaten egg on the top and sides of the pastry. Score the top of the pastry with a knife, cutting shallow diagonal lines to create a crosshatch pattern. Brush the top again with the egg wash.
- Bake for about 25 minutes, until pastry is golden brown. Slice and serve!
