I don’t know about you, but with such a busy lifestyle these days I’m always looking for convenient on-the-go breakfast ideas. I want something that’s not only easy to make and pack in my handbag, but also calorie conscious and full of energy. Thanks to Kashi® Organic Breakfast Superblends, I was able to create these protein packed chocolate chip banana muffins to help add a perfect start to my morning routine.
Kashi® Organic Breakfast Superblends are extremely versatile and will blend into any routine helping to deliver goodness throughout your day. Not only can you make muffins out of them {make sure to check out the recipe below}, but also smoothies, pancakes, popsicles, power bite macaroons, and even homemade ice-cream.
This is currently a new product offered by Kashi and is being sold at Target.com. They have 3 different flavors: Rise & Shine Vanilla, Sun-up Coconut, and the one I used which is Cocoa Awakening {because you can never have too much chocolate in your lives!}. The possibilities of what you can make with these plant-based superblends is endless and what I love most is that they are both gluten free as well as vegan.
In my recipe I wanted to make sure to use clean ingredients. I’m a huge fan of organic everything and try to always buy it when there is an option. I was also able to substitute apple sauce for butter and part of the sugar to help meet my health-focused goals.

Chocolate Chip Banana Muffins
- 3 large organic bananas
- 1/4 of a cup of Cocoa Awakening Kashi® Organic Breakfast Superblends
- 1/4 of a cup of organic granulated sugar
- 1 organic egg
- 1 teaspoon of organic baking soda
- 1 teaspoon of organic baking powder
- 1/2 teaspoon of salt
- 1/3 of a cup of organic apple sauce
- 1 1/2 cups of organic whole wheat flour
- 3/4 of a cup of organic chocolate chips
- Preheat oven to 375 degrees.
- Mash the bananas in a bowl.
- Mix in the cocoa awakening blend, sugar, and 1 egg.
- Mix in the apple sauce and the rest of the dry ingredients {baking soda, baking powder, flour, and salt}.
- Lastly stir in the chocolate chips.
- Evenly distribute between 12 muffin wrappers lined in a muffin tin {GCG TIP: spray the muffin liners with a non-stick cooking spray so they don't stick}.
- Bake for 18-20 minutes.
- Let cool and enjoy!
