For some, cooking dinner can be a daunting task. You get home from work, are tired, and now you have to cook a meal for you and your family. Luckily, today I am sharing a recipe that is super easy AND healthy. It’s a favorite in my household and I wanted to share it with all of you.
I always like putting a creative spin on classic recipes and adapt them to make them a little more on the lighter side. As we all know, lasagna can get messy, but thanks to the NEW Scotch-Brite® Scrubbing Dish Cloths I have no need to worry. The Scotch-Brite® Scrubbing Dish Cloth is great for cleaning up a dirty kitchen, but I also wanted to share 5 tips on minimizing the mess in the first place:
STEP 1 >> GET ORGANIZED
Being organized is key. To save time, wash produce as soon as you bring them home from the grocery store. That way, when you are ready to prepare your meal, you will have one less step and pot to deal with. When cutting up your veggies for a recipe, make sure to double it and bag the extra. You will save yourself time and a mess for the next time you use them to cook.
STEP 2 >> CLEAN AS YOU GO
I have always been a huge fan of cleaning as you go, otherwise you will feel overwhelmed at the end when you have to clean up the entire kitchen. Wash all the colanders and pots as soon as you are done using them. They are much easier to clean before the food has had a chance to dry AND you reduce the clutter of dirty dishes in your sink. Also make sure to wipe down spills as soon as they happen. If you wait, they can harden which will leave you with a much bigger chore later.
STEP 3 >> PROTECT THOSE COUNTERS
Place all stirring spoons on either a plate or a spoon rest so you don’t get dried messes on your countertops. Also make sure to use a cutting board when chopping. It protects the spread of germs. It also makes for an easy clean up. Simply place the cutting board in the dishwasher after every use.
STEP 4 >> USE A GARBAGE BOWL
Instead of walking over to the trash with handfuls of peelings or scraps, and of course dropping some as you go, use a bowl on the counter where you are working to collect all of your cooking waste. It is more efficient and will save you time.
STEP 5 >> SLOW DOWN
The biggest way to minimize mess is to cook slower. When you aren’t rushing and more deliberate in your measuring, chopping, and stirring, then you will make less of a mess. Take your time between each step to stay neat and help prevent those mistakes.
Hopefully the tips above will help you make less of a mess in the kitchen. I have tried to stick to all 5 when cooking myself. So as I stated before, this healthy turkey lasagna is a favorite in my household. I find it super easy to make as well as extremely flavorful. It is great for big families, or for freezing leftovers for another night. I usually like to serve it with a side salad full of vegetables I have around in my fridge. Now let’s get to that recipe:
Healthy Turkey Lasagna
- 1 cup of chopped onion
- 1 cup of chopped fresh mushrooms
- 2 garlic cloves, minced
- 1 pound of ground turkey
- 1 jar of your favorite tomato sauce
- 1 box of no-boil lasagna noodles
- 1 egg
- 1 15 ounce container of reduced fat ricotta cheese
- 4 cups of reduced fat shredded mozzarella cheese
- 1/2 cup of parmesan cheese
- Preheat oven to 375 degrees.
- Combine the beaten egg, ricotta cheese, and two cups of shredded mozzarella cheese in a bowl and set aside.
- In a skillet sauté the ground turkey for about 5 minutes, drain and return to the pan.
- Add the chopped onions mushrooms, and garlic and continue to sauté for another 5 minutes. Then mix in a few tablespoons of tomato sauce and set aside.
- Begin to assemble the lasagna in a baking dish. Spread 1 cup of sauce on the bottom and layer 4 uncooked lasagna noodles {they will overlap a bit}. Next, add half of the ricotta cheese mixture, half of the ground turkey mixture, and 1 cup of tomato sauce. Repeat this again.
- For the top, add another layer of lasagna noodles, the remaining sauce, shredded mozzarella, and parmesan cheese.
- Bake covered with foil for 30 minutes.
- Uncover and continue to cook for another 10 minutes.
- Let stand for 15 minutes before serving.

This looks and sounds incredibly delicious! As much as I enjoy cooking, I don’t look forward to it during the weekdays because like you said, I’m usually way too tired from a long day of work and the last thing I want to do is cook a full meal, ugh! I’ve never added mushroom to my lasagna before, I’ll definitely be giving it a try!
