I recently got some fun new pots to play with {like this Staub Cocotte and this Le Creuset Oval one} so I’ve been all about doing some cooking in the kitchen. During these snowy months, I try to make recipes that are easy, taste great {duh!}, and can effortlessly be packed up and brought to work for lunch during the week. I wanted to find meals that were both hearty and heathy so that I could justify it as the main course. Any of these soup + stew recipes below fit my criteria as the perfect winter dish.
